Torta del Casar is a sheep cheese with Protected Designation of Origin which is made with raw milk from merino sheep and left to aged for at least two months to provide the characteristic creaminess of this amazing product.
The geographical area where the Torta del Casar has always been manufactured transhumance and shepherding area. It is a cheese created from the cheese making tradition of many generations, and in 1791 the sheep cheese Casar de Cáceres was mentioned in the interrogations of the Royal Audience.
The Torta del Casar was considered in its beginning a failure when sheep cheese was creamy, was not sold, it was given away to consider it sleazy. This mistake at the end has become one of the best and finest cheeses in the world.
